Valchiavenna
A fascinating and evocative mountain territory, located on the border between Italy and Switzerland, in the northern part of Lombardy, it is crossed by the Liro torrent and the Mera river, with three main valleys (Valle Spluga, Val Bregaglia, Piano di Chiavenna) that meet in the municipal area of Chiavenna.
A city famous for its historic architecture and its role as an ancient transit point and trade route between Italy and northern Europe.
Today it is also known for its natural beauty: mountains, lakes and valleys that offer many opportunities for hiking and skiing.
Back in 1859, a gentleman who had returned safe and sound from the Crimean War began the construction of the Crimea hotel. In 1964, the hotel was taken over by the Giacomelli family, who began the complete renovation of the building in 1981. In 2005, a new, young and dynamic management began, brilliantly directed by the sibling brothers, Giulia and Mattia Giacomelli. The restaurant overlooking the Pratogiano Park can accommodate groups of up to 150 people. The annexed Crotto is also worth a visit, excellent for preserving cheeses, cured meats and local wines.
Local artisanal brisaola
It is the typical cold cut of Valchiavenna: beef, salted, spiced and cured using traditional methods that reflect ancient local practices. The meat is processed with a mixture of salt, pepper, garlic and rosemary, then left to mature for several months in a cool, ventilated environment. The result is a brisaola with a delicate but intense flavour, a soft texture and a red colour. It is a gourmet product, appreciated for its high digestibility and refined taste
